5-Minute Cold Cucumber Salad 1
Cucumbers' refreshing cool crispness is especially appreciated in the warm summer months when they are enjoyed served fresh in salads or with dips.
Prep and Cook Time: 0
1 medium tomato or red bell peppers
1 small red onion
1 TBS extra virgin olive oil
2 tsp lemon juice or wine vinegar
1 medium clove garlic
sea salt and pepper to taste
Optional: 2 TBS fresh or 1 tsp dried dill
Slice onions, press garlic, and let sit for at least 5 minutes.
Dice tomatoes or slice bell peppers.
Combine Cucumbers and tomatoes or bell peppers and onion in a bowl.
Add the ingredients of the Mediterranean Dressing and mix together.
