Cut off both ends of pineapple and discard. Stand pineapple up on cutting board. Cut off peel going around pineapple. If the pineapple has deep eyes, simply remove them with the tip of a knife. Cut pineapple into fourths and cut out core from each section. Slice each section lengthwise either in half or thirds. Turn pineapple slices and cut again across the width for desired size of chunks, usually about 1inch pieces.
