If you are in a hurry, rinse cilantro bunch and chop entire bunch starting at the leafy end furthest from the stems until you have desired amount. You can keep doing this until you get down to the thicker part of the stems. A more meticulous approach is to separate the stems and remove leaves individually from stems. Chop only the leaves.
